Okra and Corn Maque Choux

Serves 8.


1/2 cup chopped sweet onion

1/2 cup chopped green bell pepper

2 garlic cloves, minced

3 cups fresh corn kernels

1 cup sliced fresh okra

1 cup (about 1/2 pound) peeled, seeded, and diced tomato

Salt and freshly ground pepper to taste (or Creole seasoning, optional)


  1. Sauté onion, bell pepper, and garlic in a Dutch oven or large skillet over medium-high heat for 5 minutes or until tender.
  2. Add corn, okra, and tomato; cook, stirring often, 10 minutes. Add up to 1/2 cup of water about halfway through, if needed.
  3. Season with salt and pepper or Creole seasoning to taste.
